There are two categories of mites. The mainstream lower price brands, and a few higher quality, black tahini-based mites sold in independents and health food stores. Oomite’s ingredients and flavour are unique in this second category, but we have worked to price it so that it’s competitive within this category of mites, while making it viable for food service.
What does it taste like?
It’s “mitey” (salty, bitter, savoury), and tails off with a balanced umami kick.
Why did you do it?
Oomite, is the creation of Magdalena Roze and Katie Graham. Two and a half years ago, they both had the same idea and decided to collaborate. They wanted to create a 100% natural, premium, savoury mite spread with great flavour, that’s loved by the ultimate tastemakers… chefs!
How to enjoy it
As one chef put it, “Use it like gold dust!” It’s packed with flavour, so a little goes a long way. The suggested serving size is 5g, so think a light spread on two buttered toasts. Speaking of toast, it’s delicious with cultured butter or avocado on sourdough (fresh or toasted). But make it your own. When used as an “ingredient” in things like scrolls, croissants, cookies and palmiers, or in pasta sauces or marinade for meats, think of it as a subtle note, where less is more.
Ingredients
A high-quality product, made from premium ingredients that are naturally packed with umami. Certified organic soybean paste (organic soybeans, water, sea salt, koji (Aspergillus oryzae)), inactive yeast (spent brewer’s yeast), filtered water, malt extract, Olsson’s fine salt.
Allergens
Oomite contains soy and gluten. As it contains spent brewer’s yeast (which is a bi-product of the beer-making process) and malt extract (from barley), there is gluten present from those ingredients. And soy, from organic soybean paste.
